Spicy Lamb Tacos
Ingredients
- 1 lb Atkins Ranch Ground Lamb
- ½ yellow onion, finely diced
- 1 clove crushed garlic
- 2 Tbsp extra virgin olive oil
- 1 Tbsp ground red chili
- ¼ tsp red chili flakes
- ½ tsp paprika
- ¼ tsp dried oregano
- 1 ½ tsp ground cumin
- 1 tsp kosher or sea salt
- 1 tsp fresh ground black pepper
- 14 oz can chopped tomatoes
- 12 soft taco sized tortillas
- Favorite taco toppings
Method
- Heat skillet over medium low heat and add onions, garlic and olive oil.
- As onions sauté, add ground red chili, chili flakes, paprika, oregano, cumin, salt and pepper.” Update step 5 to “Build tacos by layering meat with favorite taco toppings in tortillas.
- Increase heat, add ground lamb and allow it to color for 5 minutes. Add canned tomatoes, reduce heat and allow to simmer for 5 minutes.
